Few commodities carry as much heritage — or as much commercial discipline — as olive oil. Behind every consignment stands a chain of geography, cultivar selection, milling practice and logistics that determines what arrives at a refinery, a bottling line or a distribution hub. The TFI Edible Oil Alliance delivers olive oils at trade scale today, and this is how we look at the product our counterparties buy.
Where Olives Thrive: The Geography of Quality
Olive trees demand a very particular climate signature: mild, wet winters and long, hot, dry summers, found in the temperate belts roughly between the 30th and 45th parallels. The finest groves cluster on sun-drenched coastal hills and limestone slopes moderated by maritime air — terrain where drainage is sharp, humidity stays low at harvest, and daytime heat is tempered by evening breezes. Inland plateaus with poor, stony soils produce lower yields but oils of remarkable concentration; irrigated lowland groves deliver the volumes that industrial buyers depend on. Altitude, soil calcium and the distance to the sea shape the oil’s polyphenol load and pungency long before a mill is ever involved.
Cultivars: The Varietal Backbone
Serious buyers specify cultivar the way steel buyers specify grade. Among the varieties that dominate world trade:
- Picual high yields, robust structure, exceptional oxidative stability; the workhorse of bulk trade
- Koroneiki small fruit, intensely aromatic oil with high polyphenols; prized for premium blends
- Arbequina soft, fruity profile from high-density groves; the backbone of smooth retail blends
- Coratina powerful, peppery, polyphenol-rich; the blender’s tool for lifting flat lots
- Manzanilla and Hojiblanca dual-purpose fruit serving both the table-olive and milling streams
Harvest timing completes the specification: early green harvests yield bitter, pungent, antioxidant-dense oils; later picks give higher yields and rounder profiles. A competent supplier reads both against the destination market.
From Fruit to Grade
Within hours of picking, fruit quality is either preserved or lost. Modern two-phase mills, cold extraction below 27°C and inert storage define what the laboratory later confirms:
- Extra virgin olive oil (EVOO) free acidity ≤ 0.8%, flawless organoleptic panel; the premium of the category
- Virgin olive oil sound oils with modest sensory tolerance
- Refined and blended grades neutralized base oils re-cut with virgin fractions for foodservice and industrial programs
- Pomace oil solvent-recovered from milling residue; a distinct industrial stream with its own buyers
Every lot moves with its certificate of analysis — acidity, peroxide value, UV absorbance, panel result — because at trade scale, documentation IS the product.
An Alliance at the Scale the Trade Requires
The TFI Edible Oil Alliance is delivering olive oils now, structured for the volumes professional buyers work in: bulk consignments in flexitanks and IBC totes, drummed lots for specialty grades, and full-container programs running on term contracts across harvest years. Allocations are planned against the crop calendar; pricing tracks the origin markets; quality is contracted to specification and verified lot by lot. Whether the requirement is a recurring alliance program for a bottling operation, base oil streams for a refinery, or harvest-year allocations for a trading book, the conversation starts with specification, volume and shipment window — and ends with a consignment that matches all three.
A Trading Partner, Not Just a Source
Olive oil rewards counterparties who understand both the grove and the vessel. TFI Group brings the same trading discipline it applies across its commodity desks — specification integrity, qualified origins, clean documentation and logistics built around the buyer’s program.
